Making blueberry ice cream

This blueberry ice cream is made in three stages. Make the blueberry sauce. Prepare ice cream base. Drizzle the ice cream into the ice cream maker. Although this process is quite simple, it is not something you want to give up at the last minute, as it will take a few hours before the ice cream freezes.

Ingredients:

  • 4 cups fresh or frozen blueberries.
  • 2 cups sugar
  • 2 tablespoons water
  • 4 cups half and half cream

Instruction:

  1. Take a large saucepan, combine blueberries, water, and sugar, Take a fermentation. Reduce heat; boil, uncover until the sugar dissolves and the berries soften. Press the mixture through a fine-mesh strainer into a bowl; remove the pulp. Stir in the cream. Cover and refrigerate overnight.
  2. Fill two-thirds cylinder of ice cream freezer Freeze according to manufacturer's instructions. Transfer ice cream to freezer containers, expanding the headspace. Freeze until firm, 2-4 hours. Repeat this with the remaining ice cream mixture.

  • 2 packages (6 ounces) of Drescol Blueberries

  • Heat the blueberry mixture over medium-high heat until the sugar dissolves and stir occasionally.
  • Continue to heat the blueberry mixture until it boils.
  • Reduce heat.
  • Boil the blueberry mixture for another 10 minutes.
  • Remove the blueberry mixture from the heat.
  • Let cool for 20 minutes.
  • Blender blends puree blueberries.
  • In a large bowl, combine the blueberry mixture, heavy cream, milk, and lemon juice.

  • Refrigerate the ice cream base overnight.
  • Know put the ice cream base into the ice cream maker.
  • Follow the ice cream manufacturer's instructions.

What is half and half?

I am often asked what is half and half? It’s a combination of whole milk and whipping cream. If you don't have half and half where you live (I think it might be an American thing) just use more whipping cream and whole milk instead of half and half, 1: 1 ratio. But if you can buy half and half, I recommend doing so.

How do you make blueberry ice cream?

Blend the blueberries in a blender.

  1. In a medium saucepan, add the blueberry mixture and sugar and stir over medium heat until the sugar dissolves.
  2. Refrigerate the mixture until cool.
  3. Add vanilla, salt, milk, 1/2 and ½, and cream. Mix together.
  4. Pour into the ice cream maker and butter as per the manufacturer's instructions.
  5. Freeze the ice cream to set up and cook.

The first day I went to a local blueberry farm and took a bucket full of fresh blueberries to use I'm sure you can use frozen too but of course, you will get a fresh taste with fresh berries!

How long will the blueberry ice cream stay in the freezer?

Stored in an airtight, insulated ice cream container, it will last for a few weeks.

Do I have to use an ice cream maker?

This homemade ice cream recipe is designed to be made in an ice cream maker and that doesn't mean it's not ice cream.

Tips:

  1. This ice cream takes a bit of planning as the ice cream base needs to be cooled after cooking. I also like that the ice cream should be allowed to harden in the freezer and then processed to make it more scoopable.
  2. You can enjoy it directly from the ice cream maker, but it will have the consistency of soft-serve ice cream.
  3. You can add any type of berry using this ice cream base. Try a combination of berries for a delicious taste.
