Ingredients

·         4 ripe bananas, cut into chunks

·         3-4 tablespoon milk

·         2 tablespoons toasted flaked almonds

·         2 tablespoons ready-made toffee/chocolate sauce

Method

Place the banana pieces on a flat tray and cover them well. Freeze for 1 hour or until frozen. Toss the bananas in a food processor and stir with enough milk to get a creamy texture when ready to eat. Scoop into 4 cups or glasses, then top with sauce and nuts.

1.       4 medium-sized ripe bananas

2.       juice of half a lemon

3.       200 g caster sugar

Method

Method

1.      Line the baking tray with baking paper. Peel a squash, grate it and cut it into 1cm / ½in pieces. Place in a single layer on a tray and freeze until solidified or overnight for 4-6 hours. (If not used immediately, transfer to a covered container and return to the freezer for one month before use.)

2.      To make ice cream, tip the frozen bananas into a strong food processor. Blend in a pulse setting until the bananas are finely chopped, then add to a very thick, creamy puree. It should be softball.

3.   Add a spoonful to dessert dishes and eat as is, or top with berries, chocolate drops, or whatever you like, like chocolate sauce in tips.

4.      If not all ice creams are served together, transfer the remaining ice cream to a lidded container as soon as possible and freeze for 2 weeks. Once frozen, you can use a scoop of ice cream to spoon into the bowls.
