The Rolled ice cream is a frozen dessert that originates in Thailand, it is called 'Thai Rolled Ice Cream' or 'Astra Fried Ice Cream. Many people will recognize creamy concoction as a treatment that floods their Instagram every summer.

If you think you can only buy rolled ice cream from professionals, then we have good news: it's easy to make your version from scratch, and believe it or not, you only need 2 ingredients. Required.

Ingredients:

  • 114-ounce can of sweetened condensed milk
  • Pinch of salt
  • Here are optional mix-ins: Chopped nuts, strawberry jam, cocoa powder, Oreos, caramel, sprinkles, cookie dough
  • Here’s the optional topping: Gummy bears, mochi, fresh fruit, sprinkles, cake chunks, chocolate chips, pretzels

Instruction:

  • Whisk together the heavy cream, sweetened condensed milk, and salt in a bowl.
  • Place your ice cream base on a metal sheet pan or rimmed baking sheet. Make sure it is less than ¼ inches thick. 1/8 inch is ideal. It should cover the bottom of the pan.
  • If you want to add the mix, sprinkle it on a sheet pan and use a silicone spatula to carefully distribute it evenly across the ice cream base.
  • Place the sheet pan into the freezer until it’s completely frozen, at least 4 hours.
  • Once your ice cream solidifies, remove the sheet pan from the freezer. Hold the sheet pan towards you. Use a flat, sharp metal spatula or paint scraper to carefully cut the ice cream into 3inch wide strips. Next, use your spatula to scrape, then gently press each strip (at a 45 angle) into a narrow tube, working fast from top to bottom.
  • If you need help making a roll based on a pan, you can use a butter knife to make the sheet into a rolled shape. Use pliers to transfer the finished roll to your serving dish (straight side cold bowls or remixes work best). Repeat with the remaining ice cream on a sheet pan.
  • Finish off with any topping you wish.

Note:

For best results, freeze your ice cream cups and rollers at least 1 hour before rolling to prevent your ice cream from melting while rolling.

When it comes to baking, most of the time I stick to the bold vision of the classics and avoid the novelty. That said, when Nun Beck makes sweet treats, candies, and frozen desserts, I like things that are top-notch, fun, and different! After looking at the thrilling Thai rolled ice cream on the internet in a local LA place, I was amazed at how delicious it was.

This is a must-try for those of you who have never seen it before. Rolled ice cream, also called ester fried ice cream, is an ice cream that is spread thinly on a cool metal surface and then pulled into a perfect spiral. The result is a delicious new way to enjoy rich ice cream - no wonder this exotic treat is so successful!

How do you Make Rolled Ice Cream?

After watching this rolled ice cream being made, I realized that I had to try it myself. It's not usually something you would make at home so I knew I would have to experiment. But after just a few attempts, I had a plan and I was able to make this excellent frozen sweet ice cream roll at home.

I easily started with my classic nine-machine ice cream recipe for sweetened condensed milk and cream. That's right- this rolling ice cream is made up of just 2 ingredients and even better, these 2 ingredients are blended perfectly on the baking tray in which they are frozen. After mixing them on my cold tray, I got creative and added something to it. My favorite flavors.

I have made 3 delicious flavors of it, but you have this recipe I encourage you to be creative and experiment with your choice:

  • 1.   Nutella Rolled Ice Cream: Add a little Nutella to your ice cream mix before freezing it for a delicious hazelnut treat. Decorate it with Ferrero Rocher for an extra kick.
  • 2.   Strawberry Cheesecake Ice Cream Roll: You will just love this version, which includes diced berries, crushed graham crackers, and cream cheese Top with strawberries and graham cracker strips.
  • 3.    Oreo Ice Cream Rolls: Just crush the Oreo cookies in your ice cream base. Top off with the whole Oreo cookie for extra effect.

Surprisingly, every flavor sets in very quickly, and from there it's really easy to roll.

How do you Make Ice Cream Rolls?

For each flavor, I run a thin spatula between a thin layer of ice cream and a cool tray. In front of your eyes, magic happens! Small ice cream-shaped spirals. For each flavor, I roll 4 to 6 and place them in a portable serving container.

After topping with extra whipped cream, these homemade rolled ice cream shows are ready to steal. Your friends & family will be very happy with this dessert. No one will believe you made it so easily at home!

Rolled Ice Cream

Ingredients: 

  • 1 cup cream (240ml)
  • ½ cup Condensed Milk (150g)

Mix-ins:                            

  • Strawberry cheesecake
  • 3 strawberries, chopped.
  • 2 tablespoons crushed graham cracker    
  • 2 tablespoons cream cheese
  • Nutella Rolled Ice Cream
  • 2 tablespoons
  • Cookies and cream rolled ice cream
  • 3 Oreo cookies

Instruction:

  • To make your roll ice cream base pour the cream and condensed milk into a large metal baking tray and mix.
  • For Strawberry Cheesecake: Use offset spatula mix in cream cheese, graham crackers, and strawberries. Break the pieces of each ingredient until the mixture is evenly mixed.
  • Using an offset spatula for cookies and cream, break the Oreo cookies into small pieces until they blend evenly into the ice cream base.
  • For the Nutella: Using the offset spatula, mix the Nutella in the ice cream base until well combined and even in color.
  • Once mixed, place your ice cream tray flat in the freezer and freeze the solids for at least 5 hours or preferably overnight.
  • When ready to serve, remove your frozen tray from the freezer and place it on a smooth surface covered with a tea towel (this is to secure the tray when rolling).
  • Work fast because this ice cream can melt fast! Using your offset spatula, move your spatula under the ice cream to carefully rotate it to form a spiral shape. Repeat this 4more times to serve 1.
  • While it is still working fast, gently place the spiral of roll ice cream in the serving container of your choice using the tongs.
  • Top with extra whipped cream and related toppings of your choice. Enjoy immediately!
