This Japanese mochi ice cream recipe takes something This sounds complicated and makes it easy for everyone to enjoy small balls of ice cream wrapped in sweet rice flour.

Making it at home is much easier than you think! And much more fun than tossing Joe's mochi ice cream package into your shopping cart.

This recipe takes just a few minutes and is Amazingly customizable! I'm using vanilla ice cream, but here's the limit! Feel free to use ice cream purchased from any store, my delicious homemade ice cream, or even syrup to make this dessert your own!

What is Mochi ice cream?

It is made from sticky rice, which turns into flour and eventually turns into a rice cake. It has a rich history in Japan, and while it is enjoyed throughout the year, it is especially eaten around the Japanese New Year.

However, in this recipe, the mochi has a sweet rice dough that encloses the ice cream of your choice. It has an incredible squash texture and is a bit sweet, which helps balance the sweetness of your favorite ice cream.

What do we need to make Mochi ice cream?

  • 1.      Measuring cup
  • 2.      Small tray
  • 3.      Leather paper and plastic wrap
  • 4.      Ice cream scoop or spoon
  • 5.      Microwave safe bowl
  • 6.      Rubber spatula
  • 7.      Food color (optional)
  • 8.      Sweet rice flour

How To Make Mochi Ice Cream?

This is one of those desserts No one seems to be able to trust me, it's such an easy process! I never made it before. In fact, it's a great way to get kids involved in the kitchen. Here is how you can make Mochi Ice Cream:

  • 1.     Using a small ice cream scoop or a spoon, scoop up 12 scoops of ice cream, about 2                      tablespoons in size, and place them on a tray lined with parchment paper. Put this tray in the freezer.
  • 2.   In a large microwave-safe bowl, mix sweet rice flour, sugar, and water and cover with plastic wrap. Microwave for 1 minute.
  • 3.     Shake the rice flour mixture to get rid of any lumps, then fix with a plastic wrap and                      microwave again for 1 minute.
  • 4.      Dip a rubber spatula into the water and stir the rice mixture again. Do not use lightly this time, as the dough will now be very sticky.
  • 5.      Cover the mixture one last time and place it in the microwave for another 30 seconds.
  • 6.      Place a large piece of parchment paper on your counter and cover it generously with corn starch (or potato starch).
  • 7.      With a wet spatula, remove the flour from the bowl and apply it to the corn starch. Wash the top of the dough with more corn starch.
  • 8.      Roll the dough into a rectangle, not less than 1/4 inch thick. Make sure you wash the top and bottom of the flour with corn starch to avoid sticking.
  • 9.      Once rolled out, place the parchment paper on the cookie sheet and place it in your refrigerator to set. This will take about 30 minutes.
  • 10.  Once the dough is set, cut the dough into circles using a 3-inch (9 cm) cutter. If you do not have a cookie or biscuit cutter, use an empty tin can or drinking glass.
  • 11.  Roll out a circle of flour and brush off any excess corn starch. Now, working fast, take a                scoop of ice cream from the freezer and place it in the middle of the circle. Squeeze the edges of the dough around the scope of the ice cream, make a ball, and squeeze to seal.
  • 12.  To help keep it in shape, wrap the Mochi ice cream ball in a killing wrap and place the seam side down in the freezer to set. Repeat with the remaining circles of flour and ice cream balls.
  • 13.  Let the Mochi freeze for at least 2 hours.
  • 14.  When ready to eat, let the Mochi ice cream sit for a few minutes to soften.

Tips for Making Mochi Ice Cream

  • 1.    As I said, Mochi dough is very sticky, so don't be ashamed to use your corn starch! It helps you handle the dough, and any excess will be easily removed when you are ready to collect the Mochi balls.
  • 2.   You must keep your ice cream scoop, keep all tools and ice cream cool, and work with only one ice cream ball from the freezer at a time.
  • 3.  To help Mochi balls retain their round shape, wrap them in plastic wrap. You can also use an empty carton of eggs in the freezer to make sure they are sewn side down.
  • 4.   Check the wattage of your microwave, as your cooking times may vary slightly. The times in this recipe were written with my 1200watt microwave in mind.
  • 5.   Regular rice flour will not work for this recipe. You will need sweet rice flour.
  • 6.   Buy sweet rice flour from any local Asian grocery store or find it online! I’m using Mochiko        Sweet Rice Flour which you can buy on Amazon.

How do I store Mochi ice cream?

It can be kept in your freezer in an airtight container for up to 1 week. Make sure that when you are ready to eat, you let them sit outside for a few minutes to soften before eating!

  • ·         1 cup (8oz / 225g) vanilla ice cream
  • ·         1 cup (5 ounces / 160 grams) sweet sticky rice flour
  • ·         1/4 cup (2oz / 57 grams) cinnamon
  • ·         1 cup (8oz / 225ml) of water
  • ·         Now few drops of red food coloring
  • ·         Then corn or potato starch for dust

Instructions

  • ·      Line on a tray with parchment paper.
  • ·      With a small ice cream scoop or spoon, take out 12 2 tablespoons of ice cream-sized scoops         (approx .75oz / 20g) and place them in the freezer.
  • ·      In a large microwave-safe bowl, mix sweet rice flour, sugar, and water, cover with plastic wrap, and place in microwave for one minute.
  • ·      Shake the rice flour mixture to remove any lumps, cover it again with plastic wrap, and place it in the microwave for one minute.
  • ·      Dip a rubber spatula into the water and shake the rice mixture again (do not use it lightly this time - it will become very sticky).
  • ·      Cover the rice mixture once more and place it in the microwave for another 30 seconds. Now it will be a sticky dough. If added to food dye, stir it until it is uniform throughout the flour.
  • ·      Place a large piece of parchment paper on your counter and cover the paper generously with corn starch (or potato starch).
  • ·      With a wet spatula, grate the flour over the corn starch and wash the top of the flour with more corn starch.
  • ·      Roll the dough into a rectangle not less than 1/4 inch thick (approximately 12x14inches /               30x35cm). When you roll, wash the top and bottom of the dough with corn starch, otherwise,       it will stick.
  • ·      Once the dough has rolled out, place the parchment paper on the cookie sheet and place it in the refrigerator for 30 minutes.
  • ·      Once the dough is set, cut the dough circle with a 3inch (9 cm) cutter.
  • ·      Take a circle of flour and brush off the extra corn starch on both sides.
  • ·      While working fast, take a scoop of ice cream, place the flat side in front of you in the middle of the circle. Now press the dough edges together around the ice cream ball squeezing to seal.
  • ·      Wrap the Mochi ice cream balls in a killing wrap and place the seam side down in the freezer to set. You can use egg cartons to keep them straight. Repeat with the remaining circles of flour and ice cream balls. Let the Mochi freeze completely for at least 2 hours.
  • ·        When ready to eat, remove from the freezer and let sit for a few minutes to soften.
  • ·         Store in the freezer in an airtight container for 1 week.
