How To Make Chicken and Vegetable Spring Rolls?
Today I am sharing a recipe for Chinese-style
chicken and vegetable spring rolls an oriental breakfast that is very popular
in Pakistan. This is a breakfast that you will find not only in Chinese
restaurants but also in local Pakistani restaurants, cafes, and even roadside
vendors.

This is a breakfast that you can get all
year round but it is the most popular in Pakistan during the month of Ramadan.
For those who do not know that Ramadan is the 9th month of the Islamic calendar
and during this month every day Muslims around the world spend a complete fast from
food and drink from sunrise to sunset.
How To Make Chicken and Vegetable Spring Rolls
for iftar?
The evening meal on which we break our fast
is called iftar and the traditional menu of iftar in Pakistan is a variety of
snacks (like a high tea). Iftar food is considered light food which can be
eaten quickly because everyone has to hurry for evening prayers. Dinner will be
after prayers or after night depending on how long the fast is. In countries
like the UK and USA where the summer fast can be around 14+ hours, most people eat
dinner right away.

A standard Iftar meal in Pakistan consists
of dates, some forms of curd (dal pakoras in curd), fruit licks (a desi fruit
salad), lemon squash, or red syrup (a traditional Pakistani nuts and dried
fruits). Red) and at least some fried items. Things like fritters (vegetable
fritters), samosas, box patties, and of course spring rolls!
List of Spring Roll Ingredients
- 4 tablespoons of vegetable oil were distributed.
- 2 cloves of chopped garlic.
- 1 teaspoon ginger paste
- 1 ½ cup of chicken mince/boneless chicken
- 1 1/2 cup chopped carrots.
- 1 ½ cup chopped capsicum.
- 4 cups chopped cabbage.
- 4 tablespoons soy sauce
- 3-4 tablespoons vinegar
- 2 tablespoons Sriracha sauce
- 1 teaspoon salt
- 1 teaspoon white pepper
- Spring roll wrappers for filling
- Oil for frying
Spring Roll Instructions
- Heat 2 tablespoons of oil. Add chopped garlic, then ginger paste. Add the minced chicken mince and cook for about 10 to 15 minutes until the color turns pink to white. Use a wooden spoon or spatula to break up the minced meat while cooking. Season with a pinch of salt and also white pepper.
- Once the chicken is cooked, add the carrots and capsicum. Cook for about a minute. Then add the cabbage. After the soy sauce, vinegar, and sriracha sauce, add salt and white pepper.
- Cook for about 2 minutes, during which time the cabbage will start to wither and the quantity will decrease. Toss the mixture to make sure the chicken, vegetables, and spices mix well. Taste and adjust spices if needed. Remove the filling from the stove, and allow it to cool.
- Meanwhile, mix flour and water in a small bowl to make a paste that will be used to seal the rolls. Carefully peel off a spring roll wrapper. Keep others covered under a damp tea towel, so they don't dry out.
- Place the wrapper in the diamond position. Place a large pile of filling at the bottom. If you have large spring roll wrappers, add more filling. Roll halfway, join the sides in, then finish rolling. Use flour paste to seal the edges. Once the spring rolls are ready, they can be frozen (see note for freezing instructions).
- Heat oil in a frying pan or large skillet to make spring rolls. Heat oil over medium heat and add 3 to 5 spring rolls in oil and cook occasionally till golden brown. Remove with a spoon and drain into a kitchen towel. Keep frying the rest of the spring rolls.
- Serve hot with ketchup, sweet chili sauce, chili garlic sauce, or green sauce.

Spring Roll Freezing Instructions:
Freezing Instructions: Grease a tray (can be a plastic or baking
tray) and place spring rolls on it one by one, making sure there is space
between each of them. Keep them in the freezer for an hour or so until they are
partially frozen. Once they are frozen, carefully remove them from the tray and
place them in a zipper-lock bag. To make spring rolls, take them out of the
freezer and deep fry them until golden.
Spring roll wrappers: The number of spring rolls depends on the
size of the wrappers. For this version, I used a 7.5-inch size (190 mm x 190
mm) which resulted in about 20 to 24 spring rolls. The brand of pastry I used
is TYJ Spring Roll Pastry by Spring Home, also available in Sydney's major
supermarkets and Asian stores. In Pakistan, spring roll wrappers can be
purchased from your local bakery they are readily available during Ramadan but
need to be pre-ordered at other times of the year.
