The rich and creamy Sheer Khurma is a
beautiful dessert that is often made on the occasion of Eid. This vermicelli
pudding is full of lots of nuts, raisins, and dates!
It's almost Eid and I couldn't do without
sharing this classic Eid dessert on the blog this week. A perfect vermicelli
pudding made with whole date milk, lots of nuts, dates, and sugar! The dish
literally means palm milk. It is often made during Eid in the Indian
subcontinent, Afghanistan, and parts of Central Asia. The joys of Eid are
incomplete unless you have whole dates!

- Made with whole milk, which makes it very creamy.
- Full of all nuts and dried fruits like cashews, pistachios, almonds, raisins, and dates!
- Flavored with rose water and cardamom.
- Can be served hot or cold. I personally like it cool.
- Saffron and coconut can also be added to whole dates if you wish. I have not used these ingredients in this recipe.
How to make Sheer Khurma in 2 steps?
- The most important thing here is to use whole milk. If you use fat-free or 1% milk, the result will not be the same. Use whole milk for this recipe. As it cools, the pudding really thickens, so I recommend adding a little milk before serving. Take care of the amount of sugar in this recipe. Dates and raisins also add sweetness, so start adding 1 teaspoon at a time and then add more as needed.
- You need to use lots of nuts and nuts on whole dates but the most important is dating. You can't lose it! Add khoya (solid milk powder) to make it more palatable and flavorful. This is optional but recommended. The consistency of whole dates is a personal preference. - 2 tablespoons ghee 30 ml
- 10-15 cashews broken.
- 10-12 chopped almonds.
- 10-12 pistachios chopped.
- 10-15 golden raisins
- Cut 6-7 large palms or use 10 small palms.
- 1 cup broken vermicelli
- 1/2 cup crushed mawa optional
- 1-liter whole milk
- 4 tablespoons sugar or to taste
- 1.5 teaspoons rose water
- 1/2 teaspoon cardamom powder
What are the Instructions for Sheer Khurma?

- Heat ghee in a pan over medium heat. Once heated (hot), add the chopped nuts, raisins, & dates to the pan. Cook for 1-2 minutes until the nuts are fragrant and golden brown. The raisins will thicken. Remove nuts from the pan & set them aside. Now put the vermicelli in the same pan and mix well. Fry the apples for about 3 minutes until they turn light golden brown. Now add khoya / mawa and fry for another 1-2 minutes. It’s an optional step, you can skip this. Then add milk to the pan & stir. Turn the heat to medium and let the milk boil.
- Stir frequently in the middle so that the vermicelli does not stick to the bottom of the pan. Once the milk has boiled, reduce the heat to medium and cook for about 8 minutes. After 8 minutes, the milk will be reduced and slightly thickened, then add sugar and mix. Transfer the fried nuts back to the pan and mix. Transfer the fried nuts back to the pan and mix. Also, add rose liqueur and cardamom powder and mix. Cook over medium heat for another 2-3 minutes and then turn off the heat. Serve hot or cold with Sheer Khurma.
